Sounds like fuel vaporisation, first check the 5mm thick heat insulating
gaskets are between carb and manifold and fuel pump and block, then insolate
the fuel pipe, could also put a heat shield between manifold and carbs as
fitted to later cars, even try a different type of Gasoline.

When you shut the car off, pull the air filter and look inside the carb,
see if fuel is dripping into manifold. When the carbs get worn, the fuel
drips into the manifold when you shut off the motor (the float is not
closing the valve). This is especially a problem when the motor is very
hot. The motor is flooding. To get restarted, hold the gas pedal to the
floor and crank, the motor will fire. My car does this nearly every
time.

Check make sure antifreeze not leaking through head gasket. Pull plugs
and inspect, or check your levels.

Sounds like vapor lock, wrap line in fiberglass to carb, may help.
